A few weeks ago Jeff and I made Salmon, and for those who don't know me, I am not a fish person But this salmon recipe that we made is just too yummy to not share. I found the following Salmon recipe on line :
The recipe on line called for the following:
1 1/2 pounds of Salmon Fillets 2 TBSP Extra Virgin Olive Oil
2 Tsp Lemon Juice 2 TBSP Soy Sauce
1 Garlic clove Minced 1/3 cup of brown sugar
Salt for taste
Jeff and I didn't like that. We thought the recipe called for too much salt( There is salt in Soy Sauce all ready so why add extra?) and we thought is called for too much sugar. So we cut the ingredients to make it, well, healthier.
Here is what we used:
1 lb of Salmon 2 teaspoons of Lemon Juice
2 Tablespoons of Soy Sauce 1/8th +1/2 TBSP of Brown Sugar
1 Tablespoon of minced Garlic
We mixed the seasonings(soy sauce, lemon juice, garlic and brown sugar) together in a big bowl and then we put the salmon in the bowl and made sure it was covered with the seasoning. We put the bowl in the fridge for 30 minutes (you can do longer- it makes the taste stronger).
Once we took the salmon out of the fridge we had the oven set to a lo broil for 10 minutes. After that we flipped the salmon and moved the oven to a hi broil for 8 minutes, flipping the salmon again at 4 minutes. We took the salmon out of the oven and set it on top of the stove for 2 minutes.
A tip- make sure to put a piece of foil on the bottom of the broiler pan. The first time we made this recipe we didn't do that, and had burned on sugar which is very difficult to clean. Also, the changes w made to the recipe makes the taste of the salmon come out more and with out the olive oil, it makes it more dry. If you don't like that, feel free to play around with the recipe and then post on the comments what you did.
On the side I made a Cucumber Vinegar Salad.

Green Onions slice and diced 1 1/2 table spoon of white wine vinegar
1 1/2 tablespoon lemon juice dash of salt and pepper.
I put all the greens together. I mixed the lemon juice with the vinegar and salt and pepper. I put that on the salad, and enjoyed.
Well, that's my yummy dinner. What's yours?
