Friday Night Fish

I haven't done a post about food in a while. I figured, since it is Lent, and Friday nights are fish night, why not go all out and make my own version of  a typical WI Friday night Fish Fry!

Since I believe in being as healthy as possible, plus I don't have a deep fryer, so I decided to bake my fish.  The first thing I did was season my fish. I soaked it in beer. (Any beer will do)




And seasonings. As well as a little bit of flour, mix them together and put them on your fish.





Make sure to grease the pan so it doesn't stick. Then bake the fish according to what type of fish you are making. I made tialpia, so it was in the oven 8-12 minutes at 350 degrees. 

While that is going one, work on your sides. I made steamed broccoli, French Fries and a simple salad.



(Homemade dressing- vinegar,lemon juice,and pepper)

Then cut up some lemon, put is all together on a plate, add a little tarter sauce and bam!

Avocado

I have a new favorite food. While, let's try favorite vegetable. Yes, I will always love onions, especially when they are free (see a post I did this time last year), and yes, pepper are amazing, along with carrots, but there is something about an avocado that is just...well...amazing.



Let me list the ways:
1. Healthy fats and omegas.
2. Hello, Guacamole...need I even say more.
3. You can substitute it for mayo in any recipe and it automatically becomes healthier.
4.They can increase your energy and make your skin shine
5. Avocado Fries.
6. You Can supposedly grow them yourself, but I have not been able to.
7. They taste good.

There you go, 7 reasons to eat Avocados.

Free stuff

Who doesn't like free stuff?

I do. And since my son has now been sleeping for 2 hours, I'm able to get some blog posts written up for this week. (yay)

Anyways, so one of my mommy group (yes, I am in a mommy group) suggested I try this website.

From what I learned of it, you set up a profile and you get free items. The thing is, I never entered my address, so how do I get these free items?

Okay, so there is more to it, then setting up a profile, You fill out surveys, you write reviews of different products, you invite people...basically you build am on-line social site dedicated to items you like. When a company finds you, then you are suppose to get a free box of goodies.

Since I want my free goodie box, if you want to sign up...go right ahead. If not, that's okay too.

Dresses

One of my favorite things about summer is all the pretty, beautiful sun dresses out there. I love to wear sun dresses. I have a few from  American Eagle that I love and a few from Maurices.

Of course, I'm looking online at...you name it, Sundresses.

A blessed 3 months.

Three months ago today, my baby was born. I don't think I ever shared his birth story. I don't know if I will. The 54 hours that I labored with him, the c-section, the complications that both he and I had...everything, I just feel blessed right now.

I am lucky enough to have a semi-healthy 3 month old. Even with his minor health problems, even though there are times where he is screaming in pain and discomfort, there are times he is smiling. Those times are happening more and more. There are times he laughs, giggles and just seems like the words happiest baby.  There are times where he snuggles, cuddles up close me and holds on to me, never letting go. I know that my baby loves me, and I know that he knows I love him.

It's that time of year....

where I start thinking about gardens. Last year, I didn't have a lot of sun light in my little tiny apartment. Due to that, none of my plants really grew, outside or inside. But this year, I have a small yard!!!!

So of course, I'm planning my herb garden. I really want to try something like this:


With the following herbs:
  • Basil
  • Mint varieties (Peppermint, chocolate mint, grapefruit mint)
  • Oregano
  • Parsley
  • Cilantro
  • Dill 
  • Chives
Of course, I also want to make my flower pots look pretty. These pictures are from a blog called The Cottage Garden


I love how pretty these look.

Bath time fun!

I just have to share, because, well, these are some very cute pictures. My son has started smiling now, and it's not just for gas, which makes me one very happy mama. The other day I was giving him a bath and he smiled, and I was able to catch it on film! (Do you like how I said on film) So, here you go, some cute bath time photos.

Craft time

I miss my knitting time. I have tried to spend some time each night to knit/work on some projects. I would love to be able to make a good supply of hats for my son before the next winter hits. I just have to figure out what size head he will have. I also want to make mittens for my husband and maybe something for me.
